Zuiyo Sake
Zuiyo's style is celebrated for its remarkable versatility and harmony: delivering a rich, satisfying rice umami paired with a crisp, clean finish. From time-honoured traditional techniques to sustainable natural farming collaborations, every bottle honors their 1867 heritage while bringing the true, vibrant essence of Kumamoto to the world.
Rice (Kome)
Zuiyo’s exceptional sake begins at the source: the rice. Working hand-in-hand with local farmers in Kumamoto, they cultivate Hana Nishiki—the region's first original sake rice—which gives their brews a versatile foundation, balancing crisp purity with rich flavour. For their most refined, award-winning sakes like Sukun, they use Gin no Sato grown through chemical-free natural farming. By honouring the distinct character of each locally grown grain, Zuiyo crafts sakes defined by depth, harmony, and authentic Kumamoto terroir.
Pure Groundwater from Mount Aso
Kumamoto is famously known in Japan as the "Land of Water." Thanks to ancient volcanic activity, the soil beneath Mount Aso forms a natural filtration system rich in mineral-permeable layers. Rainwater slowly filters through these strata, becoming pristine underground spring water. Zuiyo draws this pure water from a deep well 120 meters underground, using it as the foundation for all their brewing.
The Art of Koji
In traditional sake making, Koji comes first. To achieve a rich, full-bodied character in their Junmai and Honjozo lines, Zuiyo selects specific tane-koji (starter spores) and fine-tunes the fermentation process for each batch. For their ultra-premium Daiginjo sakes, they strictly adhere to traditional, labor-intensive handcrafting techniques using wooden tray methods (Koji-buta and Hako-koji).
Pioneers of the Historic Kumamoto Yeast
Zuiyo primarily brews with Kumamoto Yeast (officially distributed nationwide as Kyokai Yeast No. 9 since 1968)—the legendary yeast strain that sparked the modern Ginjo sake movement across Japan.
Famous for its exceptional versatility, it allows brewers to shape everything from crisp, razor-sharp dry sakes to rich, aromatic, and fruit-forward pours. Zuiyo continues to use this iconic yeast to create perfectly balanced, fragrant sakes.
